Ingredients

  • 2 Large firm apples Honeycrisp, Fuji, or Granny Smith
  • 4-6 slices Smoked bacon
  • 1/2 cup Sharp cheddar cheese shredded
  • 2 tbsp Chopped green onions or chives
  • 1 tsp Honey or maple syrup
  • 1 pinch Black pepper
  • 1 pinch Smoked paprika

Equipment

  • 1 Cast iron skillet small or medium, fire-safe
  • 1 Aluminum foil for covering skillet or stabilizing apples
  • 1 Cutting board
  • 1 Campfire grate or grill over hot coals
  • 1 Tongs or heat-safe gloves

Method

  1. Core the apples, leaving the bottoms intact to create a pocket.
  2. Wrap each apple with 2–3 slices of bacon, tucking ends underneath.
  3. In a small bowl, mix the cheddar, onions, honey, pepper, and paprika. Stuff the mixture into each apple cavity.
  4. Place the apples upright in a cast iron skillet. Use small balls of foil to keep them steady if needed.
  5. Cover the skillet loosely with foil and set it on a campfire grate or grill over low, hot coals.
  6. Cook for 20–25 minutes, until apples are tender, bacon is crisp, and cheese is melted.
  7. Serve hot, straight from the skillet.
